Quick and Easy Pea and Ham Soup

Serves 6

Ingredients

  • 900g Frozen Garden Peas
  • 1 Medium Yellow Onion
  • 2 Cloves Garlic
  • 1 Medium Potato
  • 700ml Vegetable Stock
  • 250g Shredded Ham Hock
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 6 tsps Mint Sauce (optional)

Preparation Time – 5 minutes

Cooking Time – 20 minutes

This is a super quick recipe that is perfect for a healthy filling lunch when you need something warm.

Now that it is getting colder I like to have a warm alternative for lunchtime in the office, especially when I am trying to cut down on carbs. This pea soup is one of my favourite soup recipes which is strange beacause I hate peas as a vegetable amd will never eat them of they are on a plate with my dinner. I like to add a teaspoon of mint sauce to my bowl of pea soup but feel free to use real mint leaves if you want a mint taste and if not you can completely leave them out. You also do not have to add the ham but I really love to add it and think it makes the soup even more delicious.

As with most of my soup recipes, I will be making this in my soup maker but if you do not have one a pot and blender will do just fine.

To make your soup just add all of the ingredients to your pot/soup maker except for the ham and mint sauce if you are using these, however if you are adding mint leaves you will need to add these aswell.

Cook for 20minutes on a low to medium heat and when it is cooked just blend until smooth.

Pour your soup into a bowl and add some ham and mint sauce if using.
