- 1 Small Cauliflower Head
- 3/4 Cup Plain Flour
- 3/4 Cup Milk
- 1/4 Cup Water
- 1 Cup Panko Breadcrumbs
- 1 TBSP Onion Granules
- 1 TBSP Garlic Granules
- 1 TBSP Paprika
- 2 TSP Cajun Seasoning
- 1 TSP Salt
- 1 TSP Pepper
- Sriracha for Drizzling (optional)
- 210g Tin Chickpeas
- 2 TBSP Lemon Juice
- 1/2 TSP Paprika
- Pinch of Salt
- Pinch of Pepper

So new year has come and gone and just like everyone else I feel it’s time to get healthy, but I still have cravings for my favourite comfort food. I love fried chicken probably more than anything else in the world but part of my eating healthier is also eating less meat so what did I do when I craved my fried chicken on a Saturday night? I made cauliflower poppers, yes cauliflower. Now I know you are probably thinking how is cauliflower remotely like chicken? Well it’s not but if we are honest it isn’t really the chicken part of fried chicken that makes it amazing it’s the crispy coating and these cauliflower poppers have just that.
These look a lot more effort to make than they actually are and don’t actually take that long to prepare.
Preheat your oven to 200°C
Start by cutting your cauliflower head into pieces.
In a mixing bowl combine the flour, seasonings, water and milk.
Pour the panko breadcrumbs into a seperate bowl. One by one dip the cauliflower pieces into the wet mixture and then into the breadcrumbs.
Place the cauliflower poppers onto a baking tray and put them into the oven to bake.
When the poppers are cooked they will be a golden brown colour and they should have softened in the middle and you should be able to stick a knife or skewer through them without any real effort. Once they are cooked remove them from the oven and for an extra spice drizzle them with sriracha.
I also love to dip these in some homemade houmous to add a little extra zing and creaminess.
Homemade houmous is so easy i have never actually bought houmous ready made. Just literally add all of the ingredients to a blender or into a bowl and using a hand blender, blend until the ingredients are smooth. Serve immediately or refrigerate until later.
The houmous will last in an airtight container in the fridge for around 3-5 days.
