Makes 4 Burgers
- 2 Beetroot Bulbs (peeled and grated)
- 100g Feta Cheese
- 1 TSP Salt
- 1 TSP Pepper
- 1 TSP Garlic Granules
- 1 TSP Chives (chopped)
- 1 Red Onion (chopped)
- 1 Egg
- Low Fat Cooking Spray

For a while now I have been seeing a lot of recipes flying around that use beetroot in various ways, now as with a lot of English people my only real experience with eating beetroot has been pickled on a salad and usually out of a jar, these burgers were actually my first experience with cooking fresh beetroot and it actually tasted really good.
I have really been trying lately to incorporate more vegetables into my diet and experiment with different veggie recipes and these burgers were a great way to do that. I served them with quinoa, olives, chickpeas and some leftover fajita chicken and because they had so much flavour I didn’t feel like I was eating a bland, healthy.
You nees to start off by grating your beetroot and placing it into some cheese cloth/muslin cloth and squeeze out all of the liquid until the beetroot is dry. This is necessary so that the burgers do not fall apart when cooking.
Add all of the ingredients to a bowl
Mix all of the ingredients together until they are well combined.
Using either a burger press or a cookie cutter (works just the same) you are going to shape your burgers. You do this by placing your cookie cutter onto a plate (this reduces the mess) and spooning some of the mixture into the cookie cutter and then press down on the mixture with the back of a spoon so that the mixture is compact inside the cookie cutter.
Then lift the cookie cutter off to leave the burger. Do this another 3 times until you have your 4 burgers.
In a pan spray some cooking spray and heat on a medium heat. Then add your burgers to the pan (you may find it easier to do this using a spatula) cook the burgers for around 10 minutes each side (turn them a couple of times durimg cooking so they do not stick) or until they are cooked through and hot in the middle. Serve with chips, salad or even just in a bun.
