Ingredients
- 3 Chicken Breasts
- 1 Egg
- 1 X 30g Bag of Doritos (Flavour of your choice)
- 1 TSP Onion Granules
- 1/2 TSP Garlic Powder
- 1/2 TSP Ground Pepper
- 1/4 TSP Salt
- 1 TBSP All Purpose Flour
- 1 TSP Chilli Flakes
- 1 Paprika
- Cooking Spray

Fried chicken is probably one of my favourite things to eat, of course it is just not one of the healthiest things to eat. I have tried so many different recipes for baked substitutes of fried chicken and they have all been pretty dry, until this one.
The important thing to remember to stop your chicken from becoming dry is to tenderize the meat by pounding it a little before before you start. You can do this with a tenderizing hammer or a rolling pin if you do not have one.
Preheat your oven to 180°
In a medium ziplock bag or food bag add the doritos. Using a rolling pin, crush the doritos until they are like breadcrumbs. You could also do this in the food processor but I use a bag and rolling pin because it’s just less thing to wash up at the end. After you have crushed the doritos, add the seasonings and give the bag a shake to combine.
In a bowl or another food bag, add the flour. Coat the chicken breasts in the flour. I use a bag for this as I can just put the chicken in the bag with the flour and shake to coat.
Next, crack the egg into a bowl and beat with a fork. Dip the floured chicken into the beaten egg and put them into the bag of dorito crumbs. Give the bag a shake to coat the chicken breasts completely. You can also do this by putting the crumbs into a bowl and coating the chicken that way, but I find it easier to add them to the bag.
Place the coated chicken onto a baking tray and spray them lightly with cooking spray
Place them into the oven and cook for 25 minutes on one side. After 25 minutes, turn the chicken over and spray again and cook for another 20 minutes or until the chicken is cooked through.
Serve with your choice of sides.
