- 250g Baby/New Potatoes (Skin On)
- 1 TSP Onion Powder
- 1 TSP Garlic Granules
- 1 TSP Paprika
- 1/2 TSP Salt
- 1/2 TSP Pepper
- Low Fat Cooking Spray

I have to admit I have been pretty neglectful of my blog lately and this is for no other reason than I have been eating out wayyyy too much and when I have been cooking, my dinners have been pretty boring. Eating out is fine every once in a while but to be honest after a while I get kind of sick of it and just want a good healthy, home cooked meal. I don’t know about you but I can get into kind of a rut with my meal plan and make the same meals every week or so, which can get a little tedious, so I decided it was time to get my old recipe books out and look for both some completely new recipes and also some recipes I haven’t made for a while.
I am always interested in finding new side dishes to go with my main meals (also known as the carb portion of my dinner) and I think these potatoes are one of my new favourites. I am not usually a huge fan of new potatoes as I think they are pretty boring, but I decided to give them another go when I came across a recipe for smashed roast potatoes. The recipe for smashed roast potatoes was pretty basic, oil, salt and cook, so I thought why not add a few extra seasonings to make them even more delicious and believe me these potatoes really are delicious,they are so crispy and full of flavour.
Preheat your oven to 200°C
In a saucepan add the new potatoes and cover with water. Boil for 10-15 minutes.
When the potatoes are relatively soft and you can easily insert a sharp knife into them, drain the potatoes and add them to a baking tray.
Now take a fork or a potato masher and gently press down on the potatoes until they are lightly crushed (you don’t want to completely mash them).
In a small dish, mix together the seasonings. Spray the potatoes with cooking spray and sprinkle the season mix over the potatoes.
Place the potatoes in the oven for around 20 minutes or until crispy.
Serve immediately as a side to your meal.
