Ingredients
- 150g Cooked Diced Chicken
- 250g Cooked Brown Rice
- 1 X 400g Tin Kidney Beans
- 3 TBSP Chopped Tomatoes or Passata
- 1 Cup Sliced Bell Peppers
- 1/2 TSP Onion Granules
- 1/2 TSP Ground Cumin
- 1/2 TSP Paprika
- 1/2 TSP Garlic Powder
- 1/4 TSP Chilli Powder
- 1/4 TSP Salt
- 1/4 TSP Pepper
- 1/2 Cup Grated Cheese
- Frylight
For the Sauce (optional)
- 2 TBSP Ketchup
- 2 TBSP Light Mayonnaise
- 1 TSP Apple Cider Vinegar
- 2 TSP Hot Sauce
Preparation Time – 15 Minutes
Cooking Time – 10 Minutes
I think these burrito bowls may just be my new lunch obsession. I sometimes find it a struggle to think of interesting things to make for lunch, especially for work, but these burrito bowls are so good. They are packed with flavour and really do fill me up, they are also a good way to use up any leftover meat from last nights dinner. They are great hot or cold, so you could make one for dinner and have what is left for lunch the next day.
You can amend the amount of chilli powder to suit how spicy you like your food, I don’t like things too spicy so I only use a quarter teaspoon. You can also amend the beans or vegetables you use, if you don’t like kidney beans you can switch them to black beans or you can add sweetcorn or whatever you prefer. Remember – There are no rules when it comes to cooking.
When it comes to the rice, microwave packet rice is fine to use. If I am being honest, cooking rice is something that has always been a little hit and miss for me, sometimes it works out fine and others I just can’t get it right and it is like eating grit so I tend to just usually stick to packet rice.
If you are not using microwave rice and are boiling rice from scratch, you can put this on to simmer and leave whilst you prepare everything else.
Spray a pan with frylight and place on a medium heat. Add the chicken and seasonings and cook for 2 minutes.
Add the tomatoes and stir. Leave to simmer for 5 minutes until most of the liquid is gone.
Whilst the chicken is simmering cook the kidney beans in a pan or microwave and if using microwave rice, cook this also. If you have boiled your rice from scratch, test to see if it is done and if so take it off the heat and drain it.
Place the rice in the bowls and on top of the rice, place the chicken and the kidney beans.
Now add the peppers, or any other vegetables you are using.
Now top with the grated cheese.
In a small dish or cup, mix together the ketchup, mayonnaise, cider vinegar and hot sauce until combined and pour onto your burrito bowl.
