- 1/4 Chopped Yellow Onion
- Chilli Flakes
- Salt and Pepper to taste
- 2 TBSP Grated Cheese

I am a huge lover of side dishes, I could easily go out for dinner and order multiple side dishes and no main meal and be quite happy, there are just so many to choose from. I also love mushrooms, however I had never tried stuffed mushrooms until recently. Now I enjoyed them but it just seemed like no matter where I looked, the mushrooms were all stuffed with the same filling, so I started to wonder what else I could put on them. That is when I tried sweet potato stuffed mushrooms. These are really simple and great to add alongside a salad, or chicken and greens.
Preheat your oven to 180°C
Stab your sweet potatoes a couple of times with a fork and then microwave for about 10 minutes or until the sweet potato is soft inside.
Cut open the Sweet potato and scoop out the middle into a bowl.
Add the chopped onion, salt, pepper and chilli flakes to the potato and mix well.
Scoop the potato mix into the mushrooms and flatten the filling down.
Top each mushroom with cheese and place in the oven until the cheese is golden and the mushroom is cooked.
Serve immediately.
