- 1.5 KG White Potatoes
- 2 TBSP Chives
- 200G Cream Cheese
- 1.5L Chicken or Vegetable Stock
- 1 Large Yellow Onion
- 10 Garlic Cloves
- 6 Rashers Bacon (optional)
- 6 Spring Onions (optional)

This is the first slow cooker soup recipe I ever tried and as far as I can remember it is the only recipe that I can ever remember cooking in the slow cooker that doesn’t include meat.
Before making this soup I always associated potato in soups with those horrible hard chunks of potato in off the shelf tinned soups, but this is nowhere near anything like that, this is the creamiest, most delicious potato soup I have ever tasted, it really is comfort in a bowl. It really does taste just like a creamy baked potato.
The toppings in this recipe are completely optional but I would definitely recommend adding bacon because well bacon makes everything better, which is why I serve this soup with cheese and bacon bread.
The best part of this making this soup for me is that you do not have to peel the potatoes, just wash and chop them. You can peel them if you want to but to be honest the skins add so much flavour.
This soup is also a good way to use up any leftover potatoes you may have and it does not have very many ingredients.
Wash and chop the potatoes and add them to the slow cooker.
Add the chives, salt and pepper.
Add the stock and cook on high for 5-6 hours or on low for 8 hours.
Once the soup is cooked, remove about 2 cups of the potatoes with a slotted spoon so that you are just taking out the potatoes and not any of the liquid.
Add these to a blender, or a bowl and blend them with a hand blender.
With a hand blender, blend together all of the contents of the slow cooker. Halfway through, add the cream cheese and continue to blend until smooth.
Then add the potatoes you removed earlier back to the slow cooker and mix them in to combine. This makes the soup even more creamier.
I like to serve this soup by adding some chopped spring onions to a bowl.
Then add your soup, top with bacon and serve with a nice slice of homecooked bread
