- 250g Lean Beef Mince
- 1 Medium Yellow Onion (chopped)
- 1 X 400g Tin Chopped Tomatoes
- 1 X 28g Packet of Fajita or Enchilada Seasoning
- 1 TSP Ground Cumin
- 1 TSP Paprika
- 125g Spreadable Cheese
- 100g Grated Cheese
- 2 TBSP Sliced Jalapenos (optional)
- Tortilla Chips

Cooking Time – 15 – 20 mins
Do you ever have those days when you really just want to say “forget about dinner, I just want to sit and watch movies and eat nachos”? Well this is the perfect recipe for those days, and it’s probably a lot healthier than the nachos you buy at the cinema.
This is just the perfect Friday night dinner for me, after a long week at work it’s quick and delicious. Chilli nachos are one of my favourite things, there’s tortilla chips, melted cheese and meat, what’s not to love?
First you will need to preheat your oven to 200°. Add your mince to a pan on a medium heat and brown the meat, then add the chopped onion and cook for a further 2 minutes.
Add the cumin, paprika and fajita seasoning (I used enchilada seasoning because the ingredients are pretty much the same so it really is preference) and a sprinkle of salt and pepper and mix into the mince and onions and cook for another 2 minutes.
Add the tin of chopped tomatoes and stir.
Simmer for around 10mins or until most of the water has evaporated and mixture has thickened. You don’t want the mixture to be completely dry but also don’t want a lot of excess water in it either.
Spoon the mix into 2 small oven dishes (you could also just put it all into a medium sized oven dish but I prefer to use my ovenproof serving dishes).
Now you are going to add the spreadable cheese. You can use any spreadable cheese you like such as Primula or Dairylea etc. But I personally prefer to use Go Go’s mature cheddar spread. This tub is also good because the tub is actually 125g so the whole thing is going to be used, rather than half and then the other half go into the fridge and then the bin after a few days because the rest wasn’t used, if you haven’t already noticed, I hate waste.
Now spread half a tub of the cheese onto each of your portions of mince.
Add the grated cheese on top of the cheese spread.
Now you can also add jalapenos if you like your nachos spicy. Using jalapenos from a jar is fine if you do not have any fresh.
Place the dishes in the oven for around 15-20mins or until the cheese is melted.
Serve immediately with tortilla chips.
